Quesaillas with Roasted Habanero Salsa

INGREDIENTS:

FOR QUESADILLAS:

  • TORTILLAS

  • 1/2 ONION

  • 1 APPLE

  • 1 BUNCH OF CILANTRO

  • 1/2 CUP

FOR SALSA:

  • 4 ROMA TOMATOES

  • 1/2 ONION

  • 2 GARLIC CLOVES

  • 1-2 HABENERO PEPPERS (adjust to your own level)

  • CILANTRO

  • JUICE OF 1 LIME

  • 1 TSP SALT

INSTRUCTIONS:

  • Cut onion and apple into thin slices. In a pan, heat oil over medium high heat, sauté onions until golden. Assemble quesadilla starting with tortilla, cheese, apple, onion, cilantro. Pan fry on both sides until cheese melted, and tortillas are golden brown.

  • On a greased baking sheet, add roughly chopped tomatoes, onion, garlic and habaneros and roast until charred. Add to a blender and pulse until desired consistency. Add lime juice, salt, cilantro and blend once more.

  • Serve with quesadillas and enjoy!
